Umbrella Training is an elite hospitality apprenticeship provider. With over 100 years of hospitality experience, here we look at some of their hospitality apprentice journeys and the opportunities it has opened for them.
Esther Smith
Esther’s mum was a chef! Therefore, growing up, Esther got to witness the enjoyment of working in a kitchen has. This led her to decide to pursue a career in hospitality. Becoming a hospitality apprentice, she thrived learning new skills and recipes in the kitchen.
The apprenticeship provided her with a skill set that allowed her to land her current job as a local chef in her area. Plus, she has been able to her to save money from her work as a chef. She hopes to move to London and fulfill her goal to become a Commis Chef.

Jorreina Zapatero
From a young age, Jorreina had a passion for food. Therefore, she would soon to be following in the footsteps of both her parent who work as chefs.
After graduating from college, Jorreina enrolled on a catering course. She developed her enthusiasm for food further, whilst sparking her interest in the culinary industry.
Once she had finished her catering course, she discovered the Umbrella Training and enrolled in a hospitality apprenticeship. During the apprenticeship scheme, Jorreina developed her skill set which enabled her to qualify with a distinction grade. This has provided her with the skillset needed for a career in hospitality. She hopes to progress further in the industry by attending university.

Henry Layton
Meet Henry, an apprentice at the Ritz! He started his apprenticeship working front of house. Since, he has worked across several different roles including reception and concierge.
Working in front of house, his main duties include greeting guests from the airport, arranging the papers for them and making sure they are well looked after during their stay. It incorporates adapting to days itinerary which could change unexpectedly. He explains that every day is different in a hotel and recalls one of his strangest requests:
“My strangest request was to get camel milk for a guest that wanted some camel milk to make a cappuccino with!”
